Imagine a day spent basking under the Adriatic sun, exploring the lush landscapes of the Pelješac Peninsula, and diving into the rich flavors of world-renowned oysters and exquisite wines. This was the reality of my memorable experience with the half-day Oyster Tasting Tour, organized by Dubrovnik Wine Tours (founded by Mario Sehic AIWS, WSET Certified Wine Educator and Diploma holder). This journey not only satisfied my palate but also inspired me to pursue deeper wine knowledge.

Trying Oysters and Wine Along Croatia’s Coast

The Pristine Waters of Mali Ston Bay

Our adventure began in the tranquil waters of Mali Ston Bay, an area famed for producing some of the finest oysters in the world. Here, the European flat oyster (Ostrea edulis) flourishes, its flavor profile unparalleled, thanks to the nutrient-rich waters that lap the shores of this serene bay. The experience of tasting these oysters, fresh from the sea, was nothing short of sublime, each bite a creamy and briny delight that spoke of the sea’s bounty.

Historical Roots of Oyster Cultivation

The cultivation of oysters in Ston dates back to Roman times. The Romans were the first to recognize the bay’s potential for shellfish farming, and their ancient techniques have been preserved and adapted over centuries. This deep-rooted history is not only a testament to the area’s enduring appeal but also enhances the oysters’ cultural significance.

The Art of Oyster Farming

Local farmers in Ston use a combination of age-old wisdom and sustainable practices to nurture their oysters, ensuring they develop in an environment that mirrors their natural habitat. The process is labor-intensive and requires precise timing and conditions to harvest oysters that meet the highest standards of flavor and texture.

Pairing Wine and Oysters: A Culinary Art

The pairing of Ston oysters with local wines is central to the tour experience. The ideal wine pairing accentuates the oysters’ natural flavors without overpowering them. Typically, a crisp white wine with high acidity complements the creamy and briny characteristics of the oysters, creating a balanced and delightful gastronomic experience.

Viticulture at Winery Vukas

The tour continues uphill to the scenic terraces of Winery Vukas. Located on the historic “Napoleon way,” this winery offers not only panoramic views of ancient walls and the azure sea but also a taste of some of Croatia’s most revered wines.

Tasting the Terroir

At Vukas, we were introduced to a carefully curated selection of wines that exemplified the best of local viticulture. The tasting commenced with the Cuvée Blanc 2021, a harmonious blend of Dubrovnik Malvasia, Pošip, and Rukatac. This cuvée captured the aromatic diversity of the peninsula, offering a fresh, vibrant palate that echoed the Adriatic’s breeze.

Next, we savored the white Pošip, renowned for its full body and crisp, refreshing acidity, which pairs delightfully with the briny sweetness of the oysters we had earlier. The depth of this wine made it a standout, reflecting the sun-drenched vines from which it was born.

Our exploration continued with the Mato 2019, a top-quality red that truly showcased the potential of the Plavac Mali grape. This wine was rich and robust, with a complexity that spoke of the rocky terrain and coastal influence that are characteristic of the region.

We concluded with the Plerej 2018, a premium red which is a testament to the winery’s commitment to excellence. This selection offered layers of flavor, from ripe berries to subtle hints of spice and earth, presenting a refined finish that lingered long after the last sip.

Exploring the Town of Ston

After our wine tasting at the Vukas winery we had some free time to explore Ston. Ston itself is a marvel of medieval engineering and gastronomy. Known for its lengthy defensive walls, historic salt pans, and vibrant culinary scene, the town offers a blend of cultural and epicurean delights that make it a key stop on the tour.

The Walls of Ston

Often called the “European Wall of China,” the walls were originally erected in the 14th century to protect the lucrative salt pans. Today, they offer a glimpse into the past and provide stunning views of the surrounding landscapes and waters of Mali Ston Bay.

Culinary Offerings

Ston’s restaurants are famed for dishes that showcase the freshness and quality of local seafood, especially oysters and mussels, paired with the region’s exceptional wines. This culinary tradition not only provides a taste of the local heritage but also highlights the natural bounty of the Dalmatian coast.

Inspired to Explore the World of Wine

This experience was more than just a tour for me, as I have done many wine tours in the past; it was an educational journey that piqued my interest in the intricate world of wines. Inspired by Mario’s expertise, I decided to embark on the WSET (Wine & Spirit Education Trust) course, earning my Level 1 certification and planning to continue my wine studies.
